Fruit Salsa

A perfect compliment of sweet and spicy featuring the star of local fruit in June - strawberries.

Serves 36

Ingredients

  • 1 stalk celery, chopped
  • 4 scallions, chopped
  • 1 red pepper, chopped
  • 1 green apple, chopped
  • 2 pints strawberries, chopped
  • 1 tablespoon lemon juice
  • 2 jalapeno peppers
  • 2 tablespoons salad oil
  • 1 tablespoon sugar
  • pinch of salt and pepper
  • Garnish with fresh cilantro

Directions

  1. Mix chopped ingredients in a bowl.
  2. Mix other ingredients in separate bowl then toss with chopped ingredients, mixing well.
  3. Serve with tortilla chips.

Berry Delight

Serves 15

Ingredients

Crust

  • 1½ cup graham cracker crumbs
  • ¼ cup sugar
  • 1/3 cup melted butter

Filling

  • 1 8 oz. pkg. cream cheese, softened
  • ¼ cup sugar
  • 2 tablespoons milk
  • 1½ cup whipped topping, thawed
  • 2 pints fresh strawberries, hulled and halved
  • 2 packages, instant pudding
  • 3½ cups milk

Topping

  • 1½ cup thawed whipped topping
  • Strawberries

Directions

Crust

  1. Combine ingredients and press into 9 x 13" pan.
  2. Chill 15 minutes.

Filling

  1. Beat cream cheese with sugar and milk; fold in strawberries.
  2. Prepare instant pudding with milk and pour over berries.
  3. Chill several hours or overnight.

Topping

  1. Spread 1½ cup thawed whipped topping on pudding.
  2. Garnish with strawberries.
