Fruit Salsa

A perfect compliment of sweet and spicy featuring the star of local fruit in June - strawberries.
Serves 36
- 1 stalk celery, chopped
- 4 scallions, chopped
- 1 red pepper, chopped
- 1 green apple, chopped
- 2 pints strawberries, chopped
- 1 tablespoon lemon juice
- 2 jalapeno peppers
- 2 tablespoons salad oil
- 1 tablespoon sugar
- pinch of salt and pepper
- Garnish with fresh cilantro
- Mix chopped ingredients in a bowl.
- Mix other ingredients in separate bowl then toss with chopped ingredients, mixing well.
- Serve with tortilla chips.
Berry Delight
Serves 15
Crust
- 1½ cup graham cracker crumbs
- ¼ cup sugar
- 1/3 cup melted butter
Filling
- 1 8 oz. pkg. cream cheese, softened
- ¼ cup sugar
- 2 tablespoons milk
- 1½ cup whipped topping, thawed
- 2 pints fresh strawberries, hulled and halved
- 2 packages, instant pudding
- 3½ cups milk
Topping
- 1½ cup thawed whipped topping
- Strawberries
Crust
- Combine ingredients and press into 9 x 13" pan.
- Chill 15 minutes.
Filling
- Beat cream cheese with sugar and milk; fold in strawberries.
- Prepare instant pudding with milk and pour over berries.
- Chill several hours or overnight.
Topping
- Spread 1½ cup thawed whipped topping on pudding.
- Garnish with strawberries.
